Mimi's Low Fat Pizza

I finally came up with a Low Fat Pizza recipe. I am a dedicated Pizza lover and have really missed my favorite food while on this journey of weight loss. My sister and I were talking about coming up with a pizza recipe that would be easy to make and low in calories. Well, here is how I made this Lovely work of art....
*1 whole wheat pita
*low fat/low sodium pizza sauce (I read all the labels on all the varieties in the store until I found the lowest in fat and calories)
*saute green & red bell peppers & sweet onions in about 2 Tbs. olive oil
*mushroom slices
*sun-dried tomatoes (in a jar)
*low-fat part skim mozzerella cheese
*oregano flakes
Spread about 1/4 cup of pizza sauce on the pita. Sprinkle with oregano. Slice the sun-dried tomatoes in small pieces and scatter around. Start adding other ingredients and end up topping with the cheese. Bake at 400 degree for about 20 min. or until cheese melts and light brown. I made enough to have for lunch and dinner the next day.
My sister made her pizza with low fat english muffins instead of the whole wheat pita bread. If anyone trys to make this, please let me know how you liked it. I found it to be very delicious and filling. I will be making it again....
Here is my Sister's recipe for her low fat pizza. She used the Thomas's english muffin's 100 cal. for the crust and she also added hot italian turkey sausage. She cooked the sausage on top of the stove first. Her's have the bell peppers & mushrooms also.

The Biggest Loser Couples Week 4

It's week 4 for my sister and myself and It has been a much more trying week for me. I am bored with chicken.....I feel like I am clucking instead of talking. I don't care for fish. I guess you could say, I could go without eating meat and not miss it. You know those 90 & 100 cal. snacks that are in those little itty bitty packs? Well, I found myself eating more than 1 little pack at times when I would try to satisfy my cravings. I don't think it's a good idea to buy those by the case from Costco, unless they are under lock and key! I am bored with the frozen Smart One & Heathly Choice meals. I need more variety and easy recipes. I do have a praise report though.....4 weeks without a craving for pizza, my weakness.
OK, time to step on the scale.........Drum Roll Please......
I maintained....0 Loss for me......My sister lost 1.4 lbs.....HOORAY for Diane! You are the Biggest Loser.....So proud of you.... Our totals are 8 1/2 for me, 9.9 lbs for Diane.
I know what I need to do to step it up next week. I am not discouraged.....Next week I will have a lossThis is my sister, on the left and me at a conference dinner during our Sister Vacation in Florida. We ate very healthy that night. NOT. The red velvet cake was awesome.

Vacation Day

Today I took a vacation day from work to watch Carter & Gray.
Steph took Noah for an eye appointment at Children's Hospital in Chicago.
We had a very relaxing day at my house. T.V. was on channel 11, kids network, most of the morning......Legos covered 1 whole table, G.I. Joe's covered another table. Cars were lined up in another room. Gray educated me on all the t.v. shows and gee is he a smart little 2 year old. Who needs Pre-school when you have channel 11? Carter talked about wanting a baby sister and he wants to name her "Emily", after watching Thomas The Train, since there is a railcar named Emily. Carter missed his brother Noah. They are so use to playing together that when they are separated it isn't as fun. If there is one thing I learned today, it was, taking care of 2 little ones is a hopping job. Between meals, snack time, drink time, wiping noses, washing hands, rocking and putting socks back on little cold feet a dozen times, I was ready for a nap myself. I admire all of the mommy's and daddy's who stay at home and do this all day long.
It is always an enjoyable day when I am with my grand-kids though....A Great way to spend a vacation day.

Throwback Thursday


This is my little
"Carter Bear"(grandson) when he was almost 6 months old.
Is he not the cutest little angel? He loves his fingers, and still does to this day...He is 5 years old now.
Carter and I have a common bond. We are both the middle child. We relate very well to each other. He is so sensitive when he leaves my house or I leave his house, he usually cries and says "don't leave Mimi". He has this attachment to me and it feels good!

The Biggest Loser Couples week 3

It's week 3 for my sister and myself. It seems to be easier as time goes by, but there have been some temptations here and there. It is weigh in time and here goes.....................................................
I lost 1 lb. this week. My sister also lost 1 lb. I told you we are twins.....I am not too thrilled about my 1 lb, but I cherish every ounce or pound I lose. I have to confess, I didn't exercise and was sick a few days which threw me off. I guess the handfuls of trail mix here and there didn't help any either and the extra pretzels and other nibbles while preparing dinner. My toughest time of day is when I come home from work. Next week will have higher numbers....so stay tuned. I am proud of US sis! We are in this together and we will be winners! Our Grand total so far is 8 1/2 lbs. lost each....Total 17 lbs. as a couple. I'm pretty sure we stayed above the yellow line this week.....I was sad to see the pink team leave last night...that Betty Sue is a feisty little momma.

Grandchild # 5 is on the way!

Friday evening started with me thinking that I was going to babysit the 3 grandsons while Steph & Jeff go see a movie. Gray was the first one in the door when they all arrived. He took his coat off and had on a T-shirt that read "Big Brother". Well, I sort of felt like things were in slow motion and I said " I knew It"......I had a gut feeling while I was waiting on them to arrive that they had something to tell us and they weren't going to a movie.
Steph is having baby # 4 .....due September 18.....and everyone is thrilled!
Mike actually made the statement to me at Christmas time that he wouldn't be surprised if Steph has a baby in August or September this year........Carter & Noah were so excited to tell us they are getting another baby....When we asked Gray if mommy was having a baby, he said "Nooooo" so sweetly. The 3 boys will be such good brothers.
Mike and I are thrilled to be grandparents of "5". She or He will be so loved. It is so amazing to watch our family grow.

The Biggest Loser Couples week 2

It is week 2 for my sister and myself for the Biggest Loser Couples. Our weigh in was this morning, via the Web Cam.....

Drum Roll Please.........
We each lost 2 lbs. this week. Grand total so far, 7 lbs each. We are both so pumped about how well we are doing and not having to starve ourselves to do it. Check back with us next week to see what numbers week 3 will bring....Way to go Sis! Thin is starting to feel better again.

In my P.J.'s all Day!




What another whirl wind weekend....I enjoyed watching the boys Friday night. They spent the night and I got up on Saturday morning and made a breakfast fit for a buffet for everyone....Jeff requested a Country Breakfast...the menu consisted of: bisquits, gravy, bacon, hashbrowns, homemade waffles, eggs & O.J. This was one tired Mimi after all that! But it was worth it to see everyone enjoy it.


I finally took down all the Christmas decorations. I finished boxing everything up on Sunday and putting everything away. What a good feeling to have everything put back. I ended up laying down around 2:00 in the afternoon, missing a surprise party for a friend, but my body said REST! I usually don't listen to my body, but this time I did and that's ok if you can't make it to everything.


It's the start of another week and I feel good. Looking forward to watching Biggest Loser tomorrow night and weighing in on Wednesday morning with my sister....

I've been tagged for a Weirdo Meme

Courtney from Life with Taylor and Callee....I need a nap.... tagged me for a Weirdo Meme! I am suppose to list 7 weird things about Me and link back to her and 7 other bloggers. This might be a hard one, but here goes.....

1. I hate to touch my innie belly button! Makes me have a sick feeling.
2. I don't like my earlobes touched by my hubby....it puts me in a bad mood.
3. I always rinse my cup or glass out when I get it out of the cabinet, same for silverware.
4. I check and double check to make sure the stove is off before leaving the house.
5. The first thing I do when I come home from being gone overnight is, wipe off the kitchen counter and sink.
6. When I was in high school, I got in trouble in study hall for talking too much, so I had to stand at the table in a room of about 100 kids in the lunch room, so I threw these green hard cookies I had made, called martian balls at the rear ends of these boys who were also standing in front of me.
7. When I'm cold at night, I start out by sleeping with socks on but have to take them off when my feet warm up.
Ok, there you have it.....I left the Real Weird ones out...didn't want to make anyone sick.

The Biggest Loser - Couples

My sister and I decided to join The Biggest Loser Couples last week. As a team, we thought we could inspire one another, even though we live over 1,000 miles away from one another. Thank God for Web Cams! We both weighed in last Wednesday morning, after watching the show on Tuesday night. I have Great news to report......
I got on the scale this morning and lost "5.5 lbs" . I heard from my sister this morning and she lost "5.4 lbs". Can you believe how close? I am back to following Weight Watcher's as best as I can. What's funny is, while talking on the web cam a few days ago, we discovered that we both weigh exactly the same! How strange is that? We always thought we were really twins and our mom delivered me 2 years later. It has been so hard living apart for so many years after her getting married, but we are use to it and still talk almost every night via the internet. We even share what bargains we pick up at the Goodwill or Tuesday Morning, "her favorite stores" by holding the items up to the camera....it is so much fun...we laugh...we cry....we are sister's on a mission to get healthier together so we can be around longer to watch our growing family. Thanks Sis for being my partner....Love you!
Our next Sister Trip to Florida, we will be sporting some Hot Bikini's! Well, maybe Hot bathing suits! Great Job Sis!!!! Stay tuned for more of the Biggest Loser Sister Style next Wednesday.

1. I went to an Elvis Presley Concert in 1975, he died in 1977. Ticket price, only $10.00.
2. I've been to the Oprah Winfrey show 4 times, stood and talked 2 times.
3. I met my husband on a blind date, he arrived with roses.......
4. I can't wear purfume, cause I am allergic.
5. I found a missing child asleep under a rack in a large store that everyone was looking for.
6. I ditched school in 2nd grade to walk home to watch BOZO on t.v. "the grand prize game".
7. I ditched school in 11th grade to go home and watch "All My Children" with my best friend.

"My Daughter's 31st Birthday Party"

Stephanie Ruth Wilson was born on January 8, 1977 at 5:17 p.m, weighing in at 7 lbs 1 oz, 21 inches long......YES, also Elvis Presley's birthday. She was going to be named "Tiffany" but seconds after she was born, I looked into her eyes and saw that she was a "Stephanie". I asked Mike if he liked that name and he said yes, and her name was changed just like that!
I had her a Family Birthday dinner celebration last night. I was so proud of the meal I prepared that took me most of the day to time everything to have ready by 5:00. I made steak & bean burritos with ALL the trimmings. Let me tell you, if you are looking for Great Salsa and Guacamole, go to Costco. It is by far the best and cheapest. I made spanish rice and at the
request of hubby, a pistachio torte.
Steph was never a cake lover, so she requested that I make my famous Lemon Bars. As you can see by the picture, I stacked them on a cake plate and added the most adorable candles that looked like a present, party hat & piece of cake.
After dinner we visited and played with the kids and had a great time. The older boys "Jeff & Nate" got out the 3 large bins of legos and played at the dining room table. Noah & Carter love when "Unkie Nake" helps them build unique things with the legos that he had as a little boy.
Steph opened up her gifts and was very happy with them. I am glad everything went so well cause she is so deserving of a special day, just for her.
As a mother, I feel so blessed to have her as my daughter. I couldn't ask for more.
Doesn't she look amazing at almost "31"? Her and Jeff are the cutest couple. They both get better looking with age.
