We don't have family here, so holidays can sometimes be difficult. We'll have fun with our friends and their family I know. We play cards and the kids enjoy each others' company. If you start cutting right away a lot of juice will drip out of the meat. I also squirt some juices over the slices and let it soak up more. But I leave the fat in those juices to keep the meat moist even after days of being left-over. She LOVED this time of year and the cooking and baking and visiting. But we will prevail in her honor. I know that you know what I mean...<BR/><BR/>I love the Thanksgiving feast. It used to be MY celebration... then all the kids started going to in-laws' homes so we could all have Christmas together! SOOOO... Audrey and family head to Pittsburgh. Keith and family head to western Massachusetts. Adam and family head to Philadelphia. And Jane and her husband alternate years with us and her Rhode Island in-laws. Jane loves helping Barry and me cook... and Barry learned and remembered EVERYTHING his Mom taught him (she had 3 boys, and she did it right by all of them... they ALL know how to cook! Pass this little tidbit onto Steph! My mother-in-law always told Audrey to make sure her boys can cook!!!!). <BR/><BR/>I have everything all set in my head... I just have to put it in motion. As in moist and delicious, ...Are we talking turkey? As in moist and delicious, not hand-me-some-water-so-I-can-wash-down dry turkey? If so, then I have a trick. After about 10 years my sister-in-law finally asked me how I did it. (Every year I make the turkeys for our family's feast, and yes, they are super moist.) So I revealed my secrets. First -- the foil. I slow-roast my turkeys beneath foil. As I'm roasting, I baste every thirty minutes. Then, after the turkeys come out of the oven, I get my wonderful brothers to drain the drippings into a clear bowl so I can see the fat separating. I remove the fat, then I use my lucky baster to suck out some of drippings. (The rest I use for gravy.) After the turkey is sliced, I drizzle some of the drippings over the layers of slices. And voila - turkey drenched in delicious natural moistness is served!!
