My favorite breakfast

I have been on an egg white omelet kick since my sister showed me how to liven it up last year when she was home. I try to eat a good breakfast before going to work cause that is my fuel and keeps me from getting hungry before lunch. I don't want to sit at my desk at work and snack. In case you are interested in how I make my famous egg white omelet: I saute fresh spinach & mushrooms in about 1T. olive oil. I also like to try all colors of bell peppers chopped up when I have them and a little diced onion. I spray my non-stick pan with Pam cooking spray for the eggs. Beat 2 egg whites with a whisk or fork, pour in pan. Sprinkle with about 2 T. mozz/cheddar cheese (low fat) and Mrs. Dash to taste. Turn over to make the omelet. I add the toppings on top. If you add everything in the omelet, it tends to break up. It is very filling! Doesn't take much time to make and I figure I am worth a good, hot breakfast. In losing weight, it is very satisfying. Much better for you than McD's drive thru breakfast.

Very healthy and quite lovely to look at too. I like scrambled eggs with diced tomatoes and spinach. I leave the whole entire fattening egg in though ;)

Yum! I leave the house at 6:30, and I just never have the time for a good breakfast like that. I wish I did because cereal just doesn't cut it most days.

That looks and sounds delicious. I agree that breakfast needs to be good and hearty... and your recipe fits the bill perfectly. Heck... I could eat that for DINNER and be happy! OK, maybe I just will. Tonight!

The eggs and spinach look yummy, but I'll pass on the shrooms. I don't like them. I've been eating an HG (hungrygirl.com) staple for breakfast. Spray a microwavable bowl with Pam, and pour in some egg white or egg substitute. Take one wedge of Laughing Cow light swiss cheese, cut it in pieces and mix with egg. Cook in micro. on high for 1.5 min, and stir. Cook another 1.5 min, stir and enjoy! I'm sure you could add veggies, but I don't have more than 5 min. total to make my breakfast. I usually throw it in a tupperware and eat it at my desk while I prep for my day. It's so creamy and good! I wish I could say that I'm losing weight, but I'm not. I haven't been able to exercise for 3 weeks with being sick. Today is the first day I feel like myself. Maybe I can get back on the wagon with working out tomorrow :)
